I Shaved My Legs - Way To Go!!

There are some things that come as a complete luxury (or P.I.A. depending on how you see it...) when you have a little one...or more....running around at your feet on a daily basis. I am not afraid to say that shaving my legs may just be one of those things. But today, I had my own little cheering section!

Sweet R is WAY into stickers these days. Puppies, kittens, produce labels....you name it, she'll stick it somewhere. Her latest find from the dollar bins is a set of stickers clearly meant for teachers...think "Nice Work", "Great Job!", "100%"....you know that good stuff. And she loves to "decorate" with them....wherever they will stick.

Well, today was one of those mornings where I felt all wild and crazy and decided it was about time to shave these legs. In my bleary eyed morning ways, I hoisted my foot up on the wall and went about my merry way. What made me laugh was when I took my foot down....only to realize that I had placed my foot directly on time of a sticker that read "Way To Go!" It was as though she had placed it right there with the specific intentions of encouraging me to do it more often...and you know what? I just may!

I, of course, left the sticker right where she had placed it! "Way To Go!" indeed mama!

May your family make you laugh many times over this weekend! Happy Friday!

Recipe: Roasted Beet Hummus

I have an almost 4 year old little girl running around my house. If there is one thing that I have learned about mama-hood in this journey so far, it is that if it is Pink, that almost 4 year old little girl, will love it...regardless of what "it" is. From clothes, to crayons, to food, Pink is the new black in her eyes. Wear it, love it, live it. Light pink, dark pink, hot pink, or pinkish, I can swing just about any deal in my favor if I can figure out a way to work in the hallowed hue!

Another thing she loves? Hummus.

And so it seems, do the rest of you, my fabulous readers. I have posted several hummus recipes in recent history and each and every one seems to be a favorite. So today I introduce to you all a culinary creation that just may be the bee's knees in Sweet R's book....PINK HUMMUS!!!

Oh, and yes, the pink is naturally created by some beautifully roasted beets...not Red Dye #3 or whatever. Nothing to fear here!

Roasted Beet Hummus

Mama Chef Extraordinaire: Dana at Minimalist Baker (http://minimalistbaker.com)

When to Introduce: Around 12 months! Because there is a decent amount of citrus juice in this recipe, I generally suggest holding off until this age to be on the safe side. Generally not an allergy issue, but the acid in the juices can be a little tough on the tiniest of tummies. If you have concerns, always be sure to consult a pediatrician.

Why we Love It:  It is so pretty!!! And, it just so happens to be all kinds of nutritious as well. Lots of vitamins and minerals from the beets as well as a healthy dose of protein from the chickpeas. Served with some veggies or pita chips, this snack can easily serve as a meal!

Ingredients:
1 small roasted beet
1 15 oz. can (1¾ cup) cooked chickpeas, mostly drained
zest of one large lemon
juice of half a large lemon
healthy pinch salt and black pepper
2 large cloves garlic, minced
2 heaping Tbsp tahini
¼ cup extra virgin olive oil

Directions:
  1. Once your beet is cooled and peeled, quarter it and place it in your food processor. Blend until only small bits remain.
  2. Add remaining ingredients except for olive oil and blend until smooth.
  3. Drizzle in olive oil as the hummus is mixing.
  4. Taste and adjust seasonings as needed, adding more salt, lemon juice or olive oil if needed. If it’s too thick, add a bit of water.
  5. Will keep in the fridge for up to a week.

Servings: This will make about 2 cups of pink Yumminess! Enough for the whole family!

Nurtured Beginnings

Along this journey of small business ownership, I have been fortunate enough to meet some fellow mamas who seem to really have it together when it comes to running a business, making a living out of their passions, and raising healthy, beautiful, families. It is my pleasure today to introduce you to one such mama. A self-proclaimed "birth junkie", Amanda Santana is the owner of Gilbert, Arizona based Nurtured Beginnings. Amanda knows that each and every woman's desired pregnancy, birth, and postpartum experience is different....and not always "textbook". She has made it her mission to help women achieve their ideals when it comes to the life changing experience of pregnancy and birth.

The services provided by Nurtured Beginnings include Doula service and Prenatal & Postpartum Fitness classes . A current member of DONA International, CAPPA, La Leche League International, Babywearing International, you can be assured that Amanda is one well-versed mama in her areas of expertise.

Without further ado, it is my pleasure to introduce you to Amanda...

Tell us about your business...
"My business consists of me being a doula, teaching prenatal and postpartum fitness, Dancing For Birth classes which is also a prenatal postpartum and baby-wearing fitness class with a mix of childbirth education and then I also make ring slings which I've been a little dormant in but I'm looking to start that back up in the next month!"

What did you do in your past life...before you launched your business?
"I was working two jobs that I was fortunate enough to like what I was doing and going to school full time for a degree I thought was what I wanted to do."

What made you decide to take the leap into being a business owner?
"I wasn't spending as much time as I wanted with the kids and I kept picking up and dropping off with school and the degree I was pursuing. So when I got pregnant and my husband asked me to stay home with the kids I knew I was going to be satisfied spending more time with the kids but I had to do something else I knew something was waiting for me. Then I stumbled upon the doula world and  I was hooked! I knew I had to do it."

What has been your greatest professional success to date?
"Educating my friends and family! No matter what I do I will always view that as my greatest achievement."

How about the biggest "lesson learned"?
"It is HARD getting started and you need surround yourself with supportive and uplifting people, take advice when it's given and never give up."

What is next on the horizon for your business?
"Branching out I'm starting up again with making ring slings maybe to sell but mostly for clients and to have for classes. I'm just going to see where it goes. Also I've been working towards learning placenta encapsulation and starting an official Attachment Parenting International support group to serve valley wide."

Where can we find you when you are not being Super Business Owner Woman??
"At home with my small army of daughters probably crafting something".

If we were to run into you at a cocktail party, what would be your "party trick"?
"I honestly have no idea it's been so long".

When someone asks you to tell a joke, what is your "go-to" one-liner?
"What does a nosey pepper do? Get jalapeno business! I swear I laughed forever when I first heard it myself!"

If you could go back in time, what would you tell your 18 year-old self?
"Be patient, stay focused, fight for what is right and you really want to be a midwife don't waste your time on anything not related to that field."

Pacific Baby 3-in-1 Thermal Bottle

Every once in a while, a baby product comes along that I say to myself....hmm, do you think I could get away with using that for myself?? This is one of those days my friends. I am so excited to share with you my latest discover....Pacific Baby 3-in-1 Thermal Baby Bottles. Yes, thermal. By definition, that means that these puppies can keep contents either cool or warm for up to 10 hours!! And when you live in Phoenix, Arizona, you can only imagine how excited mamas will be about this product.

The first thing I noticed when I received these, was how super cute they are! I have multiple water bottles on my own rotation that look quite similar to these and there is nothing about them that screams, "Usual Baby Gear." Not only are these environmentally friendly bottles perfect for day on the go, but your little love will be the talk of the play date as they have a colorful,  trendy design (which come in both 4oz and 7oz sizes) made of bacteria-resistant ,vacuum insulate, stainless steel. And obviously, they are 110% healthy for baby since they are BPA, PVC, and Phthalate free

So, here is the coolest thing in my book....get ready for it.....

These bottles grow along with your little one! No need for 3 stages of plastic containers over flowing from your cabinets.... These puppies convert from wide-neck infant bottle, to beginner sippy cup, to toddler drinking bottle with the change of top. How awesome is that? Personally, I wish I had known about these when my oldest was making the transition out of bottles. Would have save me from some unsavory language whenever the dozens of plastic parts came raining down on me from the cabinets every time I went in search of a complete sippy cup. With this one, just switch out the top and go! With cold...or warm....drink in hand!

See what I mean? This handy-dandy product just may be in my own cup-holder more often than it is in my toddler's!

This is definitely one of the things we love!!

Recipe: Persimmon Puree

Have you ever had a Persimmon?? Me neither...until about a month ago. And let me tell you, I am sad that I had missed out on them for the first 3 decades or so of my life. These little puppies are super yummy and I would guess, that you probably walk past them every time you go to the supermarket. Persimmons look like a cross between a tomato and an apple. They come in several varieties, two to be exact. The tastes are similar though there are some big differences to note. Fuyus are rounder and can be eaten firm. They have an apple-like texture, where as Hachiyas are heart shaped and need to ripen until REALLY soft before you try eating them. Either way, they make a FABULOUS puree that your little love is sure to enjoy!

And while you are at it, give it a try yourself....my guess is that you will be seeking these beauties out in the future!

Persimmon Puree

Mama Chef Extraordinaire: Catherine from Weelicious (www.weelicious.com)

When to Introduce: Around 6 months! Although Persimmon is not a food commonly found in the baby food aisle at the supermarket, it is not a highly allergenic food and can be fed quite early! The taste is sweet (but not too sweet...) and your little one will likely be hooked! As always, be sure to consult a pediatrician if you have questions or concerns.
Why we Love It:  In addition to it's innate Yumminess, Persimmons are a great source of vitamin A, C, beta-carotene and soluble fiber. And for all you mama's in the know when it comes to foods that will help your little one with constipation....this is another "P" food to add to the rotation! Yep, "P" stands for "poop". Nothing wrong with that!

Ingredients:
2 ripe Persimmons

Directions:
1.Peel the fruit
2. Cut the fruit
3. Puree the fruit!
(Does it get any easier than that?)

Servings: This will make about 12 ounces or so of Yumminess! You may just want to double the recipe so you can share...and not feel too guilty.!

Facebook Baby Swooning....

Gotta love social media.....not only does it allow you to reconnect with old friends and family who live far away, classmates your never would have thought about ever again (but now kinda secretly love to stalk online), and allow you to still pretend you are somewhat relevant and cool by "Liking" the most popular band and viral dance videos, but it forces you to call into question major life decisions.

Since this blog is primarily a parenting blog, I will give you three guesses what I am referring to....and the first two don't count.

Like puppies and kittens, spring is the season for babies. And everywhere I look on Facebook, there are belly-pic selfies and bright red, squishy faced newborns staring me in the eye. Dead in the eye...as though they are issuing me some sort of challenge.  Like the box of Thin Mints in my freezer, "You know you want one more...." they seem to say. And I melt just a little....even for those newborns that belong to one of the aforementioned "classmates I never would have thought about ever again". Because they are amazing. And even though I will likely never meet them, they make my ovaries hurt. They do...

Funny thing, I NEVER would have considered myself a baby person had you asked me 5 years ago. And then I had one....and that one was so amazing that I (ok, WE...I will give credit where it is due) made another one. And he was perfect too. For sure, I am the only mother in the entire universe with TWO perfect children right?? I mean, come on....

I find myself thought-stalking people I see in public (just realized that is the 2nd time I used the word "stalk" in this post...I promise I am not creepy....).  Wondering how they determined the right family size for them. Thinking about if the mom of two high schoolers ever gets baby fever. Contemplating if the family with 5 kids has room for "just one more." Does every mom really just KNOW when they are "done"?  Did the "big family" across the street just say "To hell with the logistics of it all...let's do this"? I can't help myself, I am a planner by nature...and that includes the next 18 years or so.

Sigh....anyone with me on this? Or am I just completely over-sharing? Eh, perhaps, but I am a pretty transparent person (especially in parenthood) and I have a sneaking suspicion I am not the only mama on here to have this cross their mind. Even if I am , writing an article about it makes me feel like I am not...so there. It's my blog and I will ponder if I want too.....(sticking tongue out here).

Don't get me wrong, I maintain that my family is perfect just the way it is.  Because it is. I have come to know a love like nothing I imagined possible since becoming a mom and I know that whatever we settle on down the road will be just right for us. But in the meantime, all you belly-pic and newborn pic posters, just know that I am lingering a little longer than usual on your photos. (Remember, I am Facebook a stalker after all), and chances are they will trigger yet another round of  "to spawn or not to spawn just one more" swooning in this house. No pressure ya'll. No pressure at all.

I bet Mark Zuckerberg never thought his little project would potentially influence the world population numbers did he? Ahh, gotta love social media.

It's a MOTY kinda day....

Well, today I believe I have made it official....I am  the MOTY (that's Mom Of The Year for those of you who are into titles....)!!! I would like to thank my family, my friends, and kind person at the intersection in downtown Phoenix for helping me reach for the stars!

Wait...back up....rewind.

Little Dude B is now 19 months old...he was FAR more important things to do than eat a meal. And because those things are so important, he must RUN top speed while he does them. Totally a common toddler phase and I am not nearly as stressed out about it now as I was when Sweet R went through this phase about 2 years ago. The difference, Sweet R got enough of my DNA mixed up into her genetic pool that she has a... ahem....bum. Little Dude on the other hand must have passed on that sip of the DNA cup as it was passed around, because this child has absolutely no, zero, zilch....booty. And thus, I cannot keep his tiny little pants up to SAVE MY LIFE!! Aside from basketball shorts, with really tight, brand-new, elastic,  just about anything else is a lost cause.

The shining moment that won my the title this morning? Walking across a VERY busy intersection in downtown Phoenix with the both of them, and at the midway point hearing Sweet R say "Mama, Brooks has no pants on..." I glance down and there he was. One tiny hand holding mine and the other holding Sweet R's wearing a t-shirt, socks, sneakers, and a diaper...his size 12 month cargo shorts at his feet. The look on his face clearly saying, "Seriously mama? Seriously?"

By the time I processed what had happened, the blinking hand on the other side of the intersection was shouting at me and I clumsily scooped up my diaper clad little man (and his shorts) and his concerned sister and managed to get out of the middle of the street with a shred of my dignity (OK, maybe HIS dignity) still in tact.

Poor kid. He spent the rest of our downtown excursion holding onto his shorts with one hand. Except when he forgot.....and they fell down again....3 more times. Once in the middle of the County Recorder's Office. Awesome.

I'm telling you, it is going to be tough to take this Mom Of The Year sash away from me anytime soon. The good news? All those 18 month shorts I bought in anticipation of this summer, may still make it to see NEXT summer. They may be 1980's style short by then, but at least they will stay up on his lack-of hips.

In the meantime....anyone know where I can buy toddler belts? No seriously...

Recipe: Green Mac n' Cheese

Around these parts, green is pretty much our favorite color. And with the luck of the Irish just about upon us with St. Patty's Day coming up, we figured there is no time like today to share with you all yet another fab green food recipe! And since I have yet to meet a child who does not like Mac N' Cheese (although my husband claims he hated it even as a child...not sure how I ended up with him...) I figured this was just the inspiration I wanted to share with you all!

So, may all Irish eyes smile upon you and may the pot of gold at the end of the rainbow be yours!

Or....may you just enjoy this healthy mash-up of Mac N' Cheese meets Produce Stand!  Whichever you prefer....

Green Mac N' Cheese
Mama Chef Extraordinaire: Catherine from Weelicious (www.weelicious.com)
When to Introduce: This one is best left for the "chewers" in the family. While you can puree just about anything, pasta dishes are tough to get to the desired consistency. I would say most over the age of 12 months can give this one a go! Be sure to consult a pediatrician if you have any concerns over food tolerance.
Why we Love It:  Ummm....it's Mac N Cheese. And it's PACKED with vitamins and nutrients for the entire family! It makes a ton, so great to keep in the fridge for the week. Oh, and it's green! NATURALLY green at that....no additives here to give it the leprechaun touch. Just some good ole' Mother Nature given color!
Ingredients:
1 pound elbow macaroni (you can also use campanelle, cavatappi or shells)
3 cups whole milk
1 cup packed fresh spinach
3 tablespoons unsalted butter
2 tablespoons flour
4 cups grated white cheddar cheese
2 cups chopped broccoli florets
1 cup peas

Directions:
1. Preheat oven to 350° F.
2. Cook pasta in salted water for about 3 minutes less than package directions call for, until al dente. Reserve half a cup of the pasta water and strain.
3. While the pasta is cooking. Place the milk and spinach in a blender and blend on high speed until smooth.
4. In a large pot melt the butter and then add the flour, whisking continuously over low-medium heat for 2-3 minutes to make a roux. Slowly whisk in the milk mixture and bring to a boil.
5. Reduce heat and simmer, whisking occasionally, 3 to 4 minutes, or until sauce is gently bubbling and starting to thicken.
6. Add reserved pasta water and cheese and whisk until melted. Stir in the pasta, broccoli and peas.
7. Transfer to a greased 13″ x 9″ baking dish and bake for 20 minutes, or until cheese is bubbling and the pasta is set.

  Servings:
This one can feed you small army! Serves about 8 and can easily be kept cold for reheatable meals on the run during the week!
Magically Delicious For Sure!!

G-Baby Designs

When it comes to being crafty, today's Working Girl just may be the queen! This was truly a business started out of necessity....necessity to not be a public spectacle when co-owner Allie ventured out of the house with her three kiddos for the first time. She was a mama to a sweet 2 year old boy and beautiful newborn boy/girl twins. As any mama knows, when traveling with her cubs, the goal is to get in, get what you need, and get out....without any significant damage.  With newborns in tow, this mama knew she would need a  tool to help her achieve that goal. Allie sat herself in front of her sewing machine and made two car-seat canopies. The next time they ventured out, they did get stopped - but this time, it was by people asking where she had bought her canopies.  And that's how it all started...

G-baby Designs is truly a family based business, involving a daughter (Allie, mother of 3), her mother (Ellen, mother of 2), her mother-in-law (Denise, mother of 3) and LOTS of love. G-baby Designs is born out of the desire and passion to share stylish, functional baby products with other mothers. With all of us being mothers (and mothers of multiples at that), we understand not only the importance, but the necessity of baby things being functional yet having the desire for them to be cute and adorable. One should not ever have to comprise style with practicality... G-baby Designs has made it their mission to surround your baby in style and love.

Without further ado, it is my pleasure to introduce you to Allie....

Tell us about your business...
"It is a family business, myself, mother and mother-in-law, that started out of the necessity of making fashionable, yet functional hand-made/sewn baby goods, and has now turned into a passion!"

What did you do in your past life...before you launched your business?
"Grade 9 Biology teacher- LOVED teaching but so very excited at the chance to be home with my own kids!"

What made you decide to take the leap into being a business owner?
"I had made car seat canopies for my twins (as we were constantly getting stopped by onlookers due to two babies) BUT then we were getting stopped by inquires as to where we got the canopies... And had several people ask if we do custom orders. So just for fun...I went into look at fabrics and well, the rest is history"

What has been your greatest professional success to date?
"While in the grocery store, I was soo excited to see someone have one of our car seat canopies. Truth be told... I followed her up and down an aisle as I just wanted to be sure it was ours, so I asked her where she got it. She said it was a gift from her mother (who had gotten it at market) and said she loved it! I was just giddy with excitement!!"

How about the biggest "lesson learned"?
"Everyone has very different taste and just because I may not like a combination of fabric, doesn't mean someone else won't. As well, by fabric in bulk - make at least 3 of whatever item in the same fabric, as it makes it so much easier for inventory and putting up in our online store (www.gbabydesigns.com)"

What is next on the horizon for your business?
"We just launched our online store and are anxious to see it in action. Next step is to get our name out there - to spread the word."

Where can we find you when you are not being Super Business Owner Woman??
"Trying to be a super mom! I had an amazing role model and see/hear of extraordinary mothers- daily , and I want my kids to have the most of their parents. Nowadays so many kids and parents miss out on family time due to schedules and busy work days/nights. I feel that us being the best for our kids is the best gift we can give them."

If we were to run into you at a cocktail party, what would be your "party trick"?
"Making wickedly-awesome martinis! Mmmmmmmm!! I love creating fun and "dangerous" drinks ;)"

When someone asks you to tell a joke, what is your "go-to" one-liner?
"I have a 2 1/2 year old and 8 month old twins... Not sure of the joke but somehow it always seems to elicit laughter."

If you could go back in time, what would you tell your 18 year-old self?
"I would say (after I finish chuckling at my naive 18year old self) "Buckle up! You have no idea what a crazy life you're gonna have!" And "Be strong and true and do what makes you happy""

Tips for the "picky" days!

(I originally wrote this article for a post on www.westvalleymomsblog.com published on 3/11/13, but thought you all may find it pretty useful too....please enjoy!)

Chances are, there is going to come a day when your little one looks at meal in front of them and say “I don’t want to eat that.” They have decided that today is a great day to exercise their new-found independence, and often that realization come while at the meal table. For some kids, this phase comes much earlier than others….even as young as infancy. For others, it is a case of a child who has eaten like a champ since birth, but as soon as they hit pre-school for the first time, they start to turn their nose up at mealtime.

With my oldest, now almost four, this phase hit as soon as her little feet hit the ground and started walking. Miss Independent had her own ideas about mealtime, and I admittedly made the same mistake that so many parents do. I bribed, I forced, I freaked out on her. I didn’t know any better and to be honest, I was afraid she would starve. As the months and years went by, I read more and more articles and talked to various experts in childhood nutrition that maintain that when it comes to  helping children develop lifelong healthy relationships with food, bribery and “just take 3 more bites” may actually be doing more harm than good. Yikes!

Today, I am sharing with you some of the tips and tricks I have learned along that way that have gotten my kids excited about mealtime and turned the sentiment (most of the time…)  from “I don’t want to eat that” to “How can we make that for dinner?” Music to this mama’s ears.
young-girl-holding-eggs-lg

Play With Your Food - Regardless of what your grandmother told you at the dinner table when you were a child, when it comes to getting little ones to try new foods, it really is OK to play with your food. This is a time for you as a parent to exercise your creative side! Make a smiley face on the plate with spaghetti squash as the hair and a bell pepper as the mouth. Make a tic-tac-toe board on their plate with carrot sticks and use some other veggies as the “x’s” and “o’s”. And if you are not confident in your own creative abilities with food, that is OK! There are products out there that can help with this. There are plates with faces  and various scenes already on them that you can decorate with food of your choice! Make it fun and chances are, they will step right up!

Make Mealtime A Lesson Time - For the toddler set, turn mealtime into education time. If your little ones are learning their letters, make it a game to eat a new food that starts with the letter of the day! If today is “A” day, make it a goal for your little one to try asparagus or artichokes for the first time. Change the letter each day to keep it new and exciting! Or, if it is colors that you are focusing on, you can do the same thing. If today is “orange” day, maybe they try butternut squash for the first time or even sweet potato fries! If you really want to make it an experience, create a chart to hang on the wall or fridge and give them a sticker when they complete a letter or color. Kiddos this age love a little challenge and this is a great way to incorporate that!

Take Them Shopping With You - Trust me, I know that sometimes that weekend trip to the grocery store is a great time for mom to get an hour of solitude, but if you are going through a picky phase with your little one, it may be a good time to take them with you. Make sure to spend lots of time in the outer edges of the store….produce, meat, dairy. And not sure much in the inner aisles….usually processed foods. Allow your little one to pick out a new fruit or veggie to try that week. Talk with them about how the food gets to the store (include lots of imagery about tractors and big trucks…kids dig that stuff). By doing this, your little love will feel like they helped make the decision this week. If they chose the food, chances are, they will eat it!

Get Them In The Kitchen - This is a great one for the pre-school set. Sure, there are tasks they should steer clear of….cutting, boiling, grating, etc. But there are LOTS of tasks you can have your little one help with when it comes to meal-prep. They can help get ingredients out of the pantry/fridge, they can scoop flour from a bin, they can dump pre-measured ingredients into a bowl, they can even stir. Sure, it may mean a little more of a mess to clean up after dinner, but kiddos love to help “create” and what better way to do so than in the kitchen? Plus, it is sure to create some great memories along the way. And just watch their face light up when they tell the whole family, “I helped make that”..and then dig in!

Those picky phases can be so frustrating, but next time they hit, give a few of these a try! I hope they help you as much as they have helped us along the way!

Recipe: Easy Cheesy Spinach Hummus

Fact: I LOVE to dip my foods.

Also a fact: So does my 3.5 year old.

Yet another fact: My 18 month old does too.

Fiction: All dips are fat laden and/or full of empty calories. Think again my friends....

I cannot wait to share today's recipe with you all because it is one that is so yummy that you will ALL enjoy it. Plus, it is totally fun....fun color (perfect for St. Patty's Day), fun to dip, fun to say....you get the idea! I am not even going to bore you with a whole bunch of background info. Let's get straight to the good stuff! And this is definitely good stuff...

Easy Cheesy Spinach Hummus

Mama Chef Extraordinaire: Catherine from Weelicious (www.weelicious.com)
When to Introduce: Around 12 months - Although most of the ingredients in this dish are not highly allergenic, Tahini Paste is made from sesame seeds, and those with nut sensitivities may have a reaction. You can leave the Tahini out if you prefer and the taste will be altered only slightly. Always be sure to consult a pediatrician with any concerns.

Why we Love It:  In addition to just being a FUN dish to serve, this meal is packed with protein (from the beans as well as the tahini) and essential nutrients from leafy greens (spinach). You can serve it with other veggies for dipping or whole grain crackers...whichever your little leprechauns prefer! Oh, and it keeps in the fridge for up to a week, so great to have on hand for meals on the fly!
Ingredients:
1 cup packed fresh spinach
1 (15 ounce) can garbanzo beans, drained and rinsed
2 tablespoons tahini paste
2 tablespoons Parmesan cheese
1/4 cup olive oil
1 garlic clove
1 tablespoon lemon juice
1/2 teaspoon salt
Directions:
1.Place all ingredients in food processor or blender and pulse until smooth!
(Does it get any easier than that?)
Servings: This will make about 12 ounces or so of Yumminess! (just enough to share a snack with your little love!)

Today I Ate A Rainbow

I have to say that I am absolutely in LOVE with today's "Stuff We Love" feature. And I am pretty darn sure that you all will be too!

Obviously one of my core principles with At First Bite is not only getting kiddos to eat healthy, but to try new foods on a regular basis. As parents, it can be very easy for us to get stuck in the same rut when it comes to meal and snack planning and our trips to the grocery store. We buy what we KNOW our kiddos will eat and we don't always take the time to think outside the box and have them try something new. Trust me....I get it. I have been there!

Today I am so excited to share with you all a product that not only promotes healthy eating, but it makes trying new foods FUN! And for those of you that follow me with any regularity, you know that this is KEY to philosophy as well.

Enter, "Today I Ate A Rainbow!" If there is one thing kiddos love, it is bright, colorful activities. And yes, maybe a little healthy competition (no pun intended...) between siblings or family members (hey, sometimes us adults could use a little extra nudge on the nutrition too...). The "Today I Ate A Rainbow" kit, is focused on the philosophy that we should not have to force or trick our little ones into eating fruits and veggies. Instead, why not make it a game? With this kit, you receive a super cute magnetic chart and 4 sets of rainbow tracking magnets. Each time a family member eats a fruit or veggie that day, they place a magnet on the corresponding color for that food.

(Ummm....added bonus alert! For the real little ones, this is an awesome tool for teaching colors as well! Have I mentioned how much I love multi-tasking??)

As the day goes by, the goal is to get one magnet in each color column on the chart. When they reach their goal and have eaten a full rainbow, they receive an achievement magnet to place on the chart and YOU, get to choose a healthy reward for the day....going to the park, taking a "nature walk", playing a game....you get the idea!

Even included in the kit, is a book called "The Rainbow Bunch". Think "Elf on the Shelf" for healthy eating. The book is a great primer for using the chart and gets kids thinking about WHY it is so important to eat their fruits and veggies each day. It gives meaning to the game that they are about to play! In addition to the book, the website, www.todayiatearainbow.com, has TONS of great tips and resources to get the conversation going in your house about healthy eating!

Love, love, love this idea and product!  Kudos to the team at Today I Ate a Rainbow!

This is definitely one of the things we LOVE!!!

Go forth (very) young man....

There was a day not so long ago....like 3 weeks ago to be exact....that my Little Dude B's lower lip started to tremble at the mere suggestion of mama walking away from him and leaving him with, gasp, another capable adult. He would literally suction-cup himself to my leg and I could go about my daily activities....so long as I didn't mind the extra 21-ish pounds that I was carrying around. I would have him switch sides occasionally so as not to create overly developed muscles in one leg as opposed to the other....

Well, maybe I exaggerate a tad....but only a tad.

We recently joined the YMCA and the primary reason we went with them over the umpteen other gyms in the Valley....FREE childcare while you work out! Score for mama!! Additionally, since my little dude is not yet in pre-school, I figured this would be a great chance for some socialization. Turns out, he is terrified of socialization. This was not an issue I EVER had to deal with with Sweet R. In fact, I am the one who cried the first time I left her with another caretaker....primary reason for my tears? She could have cared LESS that I walked out the door. She is a super social being by nature and loves the stimulation of new people and things to look at. Little Dude however, has been by my side since birth and seemed perfectly content to stay so....

After several "Ummm....we have tried to calm him down, but his face is now purple and dripping with tears and snot...." calls from the YMCA childcare I was convinced I would have to sit by his side while he took his SATs. But a reassuring conversation with the director of the center convinced me to keep trying it and day by day, he would get more comfortable.

And guess what?? As sure as the sun comes up every morning, Little Dude is getting there. Last week, it took minimal prying to get his tiny fingers to loosen their grip on my shirt when I dropped him off. Today....sniff, sniff....he willingly walked through the gate into the play area and only glanced back at me once as if to say...."Ok mama.....we are good here."

I stood there and looked at him blankly as he toddled off to the wooden kitchen set to commence his daily "Iron Chef" competition (with himself) as he does every day at home. My heart broke just a little. One would think the relief of having a stress free drop-off would be a joy. But I couldn't help but think for just a moment....that I wished he was gripping my shirt again. I wished he was needing me just as much today as he did last week.

Sigh....my kiddos are little (both under 4), so I know I have many many "needy" moments ahead of me. But as those days get fewer and further between, I am pretty sure I will find myself growing more and more "needy" in their absence. Needy for their love and needy for their, well....needs. Boy am I gonna be a wreck when it comes close to empty nest time....hope my Big Dude is ready for some large dogs....or goats. I have always kinda wanted some goats....after all, aren't they called "kids"? Ba dum dum! I crack myself up sometimes.

So, go forth (very) young man.....but not too quickly. Or mama just may latch onto your leg and not let go.....

A mama on the wall....

It's Friday, the weather is G-O-R-G-E-O-U-S here in Phoenix and I have a major case of Spring Fever....so much to the chagrin of many of you (I am giving myself a lot of credit here...), today's post will be short and sweet....cuz then I am going to go play in the sun.

You know the saying "Oh to be a fly on the wall...."? I consider myself lucky because each day, about 25%  of Little Man B's nap time is spent having "conversations" with himself....and I get to hear them all over the magical little box called the baby monitor.

Obviously, he has no clue and I sure I won't be able to get away with eavesdropping in this way forever. I figure that sometime around the age of 15, he will figure it out and remove the ancient artifact of technology from my earshot...or maybe just unplug the transmitter in his room....he will for sure be smart enough to figure that out right? If not, we may have bigger problems...

But for now, I take great pleasure in this little baby melodrama that I get to partake in each day...yes, sometimes I answer him. No, we do not have one of those new-fangled 2-way monitors....I just entertain myself. His conversations have evolved from occasional babbles, to steady streams of dialogue complete with inflection, to roaring at his diny-horse books (that's dinosaur books for those of you not up on our family lingo...), to full out road-rage-esque fits of baby-cussing. Those are the most amusing to me...there are no tears (usually). But the angst with which this serious little 18 month old "speaks" is oddly inspiring to me. He is my son for sure...he has spent a lot of time in the car with me.

I know, not a particularly inspiring or informational post today, and I am certain this is not a phenomena exclusive to my home. But it makes me smile when I take time out to listen, and I am sure it does you as well. And the sun is out. And Spring is on the way. And that is what Friday's are all about.

I am off to catch some glorious sun....and soon as I can pull myself away from this baby monitor!

Happy Weekend!
