Recipe: Rhubarbsauce

As we discussed in a post earlier this week, Tis the Season for sniffles....lots of them! As adults, we are able to load up on the vitamin C when we feel a tinge of the sniffles coming around. That can be harder to do with our little ones since citrus can be tough on tiny tummies. But, did you know that Grandma's Rhubarb Pie is packed full of Vitamin C also?? Neither did I!!! Until today!

With this simple recipe from the Little Green Pouch website (www.littlegreenpouch.com), you can help your little love boost his immune system this cold season with some Yumminess! Behold my friends, Rhubarbsauce!!!

When to Introduce: As early as 6 months (always check with your pediatrician)

Why we Love It: Rhubarb is an excellent source of Vitamin C, high in dietary fiber and a good source of calcium.  Apples pack in quite a bit of soluble fiber and are also high in Vitamin C.

Ingredients:
2 cups rhubarb, about 3 stalks
¼ cup water
Apple juice (if needed)
~ 2 cups store bought applesauce

Directions: Remove the ends from the rhubarb stalks. Wash, and roughly chop. Simmer with water, covered, until very tender, about 10 minutes. Add rhubarb to a blender or food processor, along with any remaining liquid. Puree.  (Add a bit of apple juice if needed to get the rhubarb moving.) Add one part pureed rhubarb to two parts applesauce.  Fill your containers of choice and chill!

Servings: About 3 cups (Enough for 4 FULL pouches)

Modifications:  Make your own applesauce if you are feeling a little extra surge of Super Mama-ness!

That's it friends! Easy as pie....actually, WAY easier than pie!!
