Recipe: Baby Gazpacho

Baby it's cold outside....I mean seriously, it's like 60 degrees here in Phoenix! Ridiculous I tell ya...

While we are breaking out the Uggs here in AZ, I am well aware of the fact that the vast majority of the country is WAY colder than it is here and I am forever grateful for not having to shovel snow of assemble snow chains ever again! So from my sunny little corner of the country, I am declaring that we bring a little bit of summer back into our lives this winter. In our baby food at least....hey, it's an improvement!

Baby Gazpacho

Mama Chef Extraordinaire:  Liz Grimm, Copperas Cove, TX

When to Introduce: 12 months (always check with your pediatrician)

Why We Love It: Tomatoes and bell peppers are good sources of Vitamin A and Vitamin C. And if you add the optional flax seed you'll get a good dose of fiber.

Ingredients:
1 tomato
1 cucumber
1/2 green bell pepper
1 tbsp flax seed (optional)

Directions: Puree everything together. Sometimes this ends up way too watery, and the little one needs some fiber, so feel free to toss in a tbsp of flax seed, which helps gel things together a bit more and adds some fiber to her diet!

Servings:Makes about 8 ounces
